Making bubble and squeak always grabs our three year son's attention, as he associates the name with pirates!!
Adding the red onion and cheddar turns what is essentially fried mashed potato, carrots and cabbage into a worthy main dish which is easy to make and very cost effective. This is particularly delicious with green tomato chutney.
Serves 4 comfortably
Equipment needed: a good 20-25cm diameter frying pan
Ingredients
4 medium baking potatoes, approximately 700gm
3 medium carrots (180gm).finely sliced
1 large red onion (150 gm) finely sliced
3 cloves garlic, finely chopped
3 tablespoons rapeseed/olive oil
100gm savoy cabbage, finely sliced
2 sprigs of thyme
180gm good quality mature cheddar, grated
sea salt and pepper
Method
Preheat oven to 170ºC
Bake the potatoes for 1 hour to 1 hour 15 minutes until cooked through. Allow to cool for ten minutes, remove the skins and mash thoroughly with three quarters of the cheese.
Place a frying pan over a medium heat, add 2 tablespoons of oil, then add the red onion and sauté for 3 minutes, add the garlic and sauté for a further 2 minutes. Add the carrots, cabbage and thyme and stir fry for 5 minutes until the vegetables are just cooked but still a little al dente.
Add the remaining tablespoon of oil and evenly pat in the mashed potato and cheese. Continue to fry for 4-5 minutes until 'squeaking'-then evenly sprinkle on the remaining cheddar and grill the top until golden and the cheese beginning to caramelise.
Serve immediately.
